Winter Carrot and Sweet Potato Soup

With carrots, sweet potato, and apples, this quick winter soup makes for a delicious healthy dinner worthy of any night.

INGREDIENTS:

1 tbsp extra virgin olive oil

2 large carrots, peeled and chopped into 1-inch pieces

1 large sweet potato, peeled and chopped into 1-inch pieces

1 honey crisp apple, peeled and chopped into 1-inch pieces

1 yellow onion, chopped

4 cups chicken broth (or vegetable broth if vegetarian)

1/4 tsp turmeric

1/2 tsp cinnamon

1/4 tsp ground ginger

Salt and pepper to taste

DIRECTIONS:

In a large pot, add the extra virgin olive oil over medium heat. Add the onions and cook, stirring often until soft and translucent, about 8 min. Add the turmeric, cinnamon, and ground ginger and stir for about 1 min.

Add the carrots, sweet potato, and chicken broth to the pot and bring to a boil. Cover and reduce heat, allowing the soup to simmer until the carrots and sweet potato become soft, approximately 25 min. Stir in the apples and allow them to soften for a few minutes. Transfer all ingredients to a blender and blend until smooth. Season to taste with salt and pepper. Serve soup with freshly chopped parsley and crusty sourdough!
